Is there some reason I'm not aware of that you can't use a regular old airstone and pump?

I don't see why you couldn't use an airstone. However the gas exchange in an aquarium has more to do with the surface area of the top of the water and keeping the water moving. Most salt tanks I've seen use powerheads for moving the water around and increasing agitation of the surface of the water.

Most saltwater setups run power heads as Dawg pointed out. This will move the water and create agitation which in turn is going to help with more oxygenated water.

Wow, my saltwater memory is working hard here. It can be done easily with a bubble wand or airstone and a pump. The smaller the bubbles the better is true in any case, but especially so in SW tanks. IIRC this is because of the difference in surface tension between salt and fresh water. Using bubble stones or wands in tanks with inverts is a no-no. IIRC it has to do with the inverts getting excess gases inside them, creating internal bubbles that can be deadly. That is a big reason you don't see it done in reef tanks and such. In fish only tanks though, no problem.
