| Honestly SDD, I am not much of a "sweets" person. I can and do make home made with my girls...but most the time if I am making something like that I just buy a mix or the pull apart cookies. I know it sounds lazy but to me really it doesn't make that much of a difference, since I don't really eat them. | |

| When I get home I'll try to remember to pull out my dessert cookbook - yes, I have a dessert cookbook, and it is 4" thick.
What do you prefer? Cookies, cakes, squares? Or just post my favorites? They are all easy peasy (If I can make them, they have to be!) I have an awesome recipe for diamond squares and drumstick cake if you want.
My personal favorite is the drumstick cake, no baking. it is similar to an ice cream cake, but is way better. Even people with sensitive teeth, or diet restriction due to diet or medical reasons can eat it frozen with no problem. A chocolate bar probably has more calories than half the cake! | |

| OK here's an easy one that anyone can make.
Grandma's Caca Balls (Some strange people call them "no bake" cookies)
Ingredients 2 cups sugar 4 tablespoons unsweetened cocoa powder 1 stick butter 1/2 cup milk 3/4 cup peanut butter 1 tablespoon vanilla 3 cups oatmeal Waxed paper (not an ingredient but you will need some)
Directions In a saucepan bring the sugar, cocoa, butter and milk to a boil. Let boil for 1-1/2 minutes and remove from the heat. Then stir in the peanut butter, vanilla and oatmeal. Drop mixture by the teaspoonful onto a sheet of waxed paper. Let sit until cooled and hardened, then enjoy. | |

| Drumstick Cake
1 pkg crushed vanilla wafers ½ cup crushed peanuts (optional - i don't use them - I prefer the smoother taste) 4 Tbsp of peanut butter ¼ cup margarine ½ cup of topscotch butterscotch (ice-cream syrup)
Filling: 8 oz pkg of cream cheese 3/4 cup of peanut butter ½ cup of sugar 4 eggs 1 container of Nutriwhip (or other whipped topping)
Mix maragarine, peanut butter, peanuts, and wafers. The mixture should clump slightly, if not, add more peanut butter. Press ¾ of the mixture into a 9x13 pan (or larger), save the rest for topping. Either freeze for 15 min or lightly bake.
Filling: cream the cream cheese, peanut butter, and eggs. Mix (electric beaters work well) a bit then add sugar. Mix until it is fairly uniform. Fold in whipped topping, keep 1/5 of whipped topping separate for topping (whipped topping should be very stiff - it can stand on end even with the bowl shaking a bit). Pour mixture over base. Spread out evenly. Freeze for 15-30 min.
Topping: spread out remainder of whipped topping over filling evenly. Pour 1 can of butterscotch topping on top of whipped topping, spread out evenly. Sprinkle remainder of crumbs on top of butterscotch. Place in freezer on a ***level spot*** for 3hrs.
Served best frozen or chilled. Keeps for weeks when frozen.
This makes a 10" x 14" pan | |

| Golden Graham Squares
8 cups Golden grahams (sugary Cereal) 5 1/2 cups Mini Marshmallows 1/3 cup Maragarine or butter 1/3 cup corn syrup 1 3/4 cups milk chocolate chips
1. butter 13x9x2 inch rectangular pan or spray with non-stick spray
2. pour cereal + 1 cup of marshmallows into a large bowl. Set aside.
3. Can either cook in Microwave or Stove. (I prefer the stove)
Stove: melt remaining marshmallows, margarine/butter, corn syrup, and chocolate chips in a 3 quart/litre saucepan/pot over low heat, stirring often. Remove from heat when mixture is melted and smooth when stirred. Pour over creeal and marshmallow mixture. Mix quickly until cereal is coated.
Microwave: Place in large microwaveable bowl: remaining marshmallows, margarine/butter, corn syrup, and chocolate chips. Microwave uncovered on high for 2-4 minutes, stirring every .5-1 minute until mixture is melted and smooth when stirred. Pour over cereal and marshmallow mixture. Mix quickly until cereal is coated.
4. make squares by pressing the mixture evenly into pan with buttered back of spoon/spatula. Let stand for one hour or refrigerate if a firmer bar is desired.
When cool, cut into squares. | |

| Apple Crisp 3c apples, peeled and thinly sliced (I like to use sweet, crisp apples like golden delicious) 1/6 cup (5 1/3 Tbs) white sugar 1 tsp lemon juice 3/8 cup (6Tbs) Brown sugar 1/6 cup flour 1 tsp cinnamon 3/8 cup (6Tbs) Margarine (cold) 3/4 cup rolled oats 2 tsp vanilla extract 1. Mix apples, white sugar, and lemon juice together. arrange in an ungreased pan. sprinkle 1-2 tbsp of water over apples. 2. mix brown sugar, flour, oats, cinnamon in a bowl. 3. "cut in" hard (cold) margarine inot oats mixture until margarine is in pea sized lumps. 4. cover apples with the oats mixture - do not mix in! 5. Bake at 350F for 40 min (can vary at different altitudes - check with toothpick until apples are semi soft) 6. serve with whipped cream or heat and serve with ice cream. (my favorite is to stick a serving in the microwave and heat, then put vanilla ice cream on it! Ok, who hid the drool smiley? ) | |
